SO a little twist on Strawberry
Jam is to add a generous amount of Black Pepper to the pot and my oh my does this add depth!
Ingredients
2lb fresh Strawberries
3lb sugar
Juice of one lemon
A generous helping of Black Pepper
Method
Hull and pop all Strawberries into a pot on medium heat. Chop large strawberries before adding. Add juice from 1 lemon and a generous amount of black pepper and heat for 30-45 minutes. The Strawberries will create a watery mixture. While this is happening warm your sugar in the oven and then add to the pot when the time is up. Stir jam (I use a porridge spurtle which works well at getting the bits out of the corners) and bring to the boil, once the temperature hits 105 degrees then continue to boil for 3 minutes.
Move off hob to cool and continue to stir to ensure sediment on the top is nicely mixed in and then decant into sterilized jars and allow to cool.
Job Done.
We enjoy this in the middle of sponges, on scones, on toast, or even on a spoon at times! ;-)
