Well this was a hit with the little one's at Beechview today!
It had the consistency of a famous brand of tomato soup that you find in a tin???.....
Nice and simple too!
Pop, chopped onions, tomatoes, tinned tomatoes, tomato puree, a carrot and some balsamic in a pot with chicken stock and whizz up in the liquidizer.
Using the same pan that you boiled everything in, make a roux by putting in a lump of butter and adding flour to it once it has melted, mix it until a dough like texture, then add 2 tbsp. of vinegar (I just used malt vinegar and that worked), then slowly add the puréed soup back in stirring constantly a bit at a time and not too much at a time to ensure that it incorporates well an you don't end up with a lumpy soup!
Season with salt and pepper if wanted?
Job done!
